In keeping with Monday coolness in other restaurants around town, Hitchcock Restaurant on Bainbridge is firing up its spatchcock tradition—starting tonight.

The method of splitting the chicken, removing its backbone, and grilling it flat (in a wood-fired oven)—you might call it butterflying—results in a smoky, blistered beaut of a bird, moist from brining. It will come with robust sides, dollar oysters, and fabled cocktails.

Bring the kids; they’re calling it family night. Sounds like Thanksgiving week to me.
