Plum Pantry jumps on the juice bar trend.

Walking through the front door of Seattle Center’s Armory, the smell of churros still lingers, but the options for eating are much better thanks to the slew of local restaurants that have populated the trendy food court over the past year.

The most recent addition is a new name and expansion to Plum Pantry, a quick-lunch spot from chef/owner Makini Howell that caters to the vegetarian and vegan crowd in the same fashion as the Capitol Hill bistro and food truck. Now, Plum is debuting an expanded dining area, demo kitchen, which includes room for cooking classes, and juice bar.

Though Plum Pantry opened last August, this new addition gives the first opportunity for diners to learn how to make at home the kind of vegetarian, vegan, dairy-free, gluten-free comfort food Howell and her team specialize in. Manager Jaclyn Wagner says the demo kitchen, while open now, won't start holding classes until sometime in January or February. Plum's sous and pastry chefs will teach the demos on a rotating monthly schedule—keep an eye out for one making spring rolls and pho, perfect for the cold winter weather.

For now, stop by for a sandwich or salad—or the tasty vegan mac-and-yease—with a juice from the impressively large juice bar. And on concert nights, Plum Pantry has been staying open until 8 for pre- and post-show dinners. If the gluten-free cookies are good enough for Pacific Northwest Ballet's ballerinas—Wagner says they've been know to pre-order 40 at a time—they're good enough for us.
