All burgers should be topped with fried egg and jalapenos.

For those instances when coffee and cupcakes alone can’t fuel a shopping excursion through University Village, Eureka! is opening at 2614 NE 46th St on Monday, November 25, with a menu of hand-crafted burgers and—more importantly—whiskies.

The California-based chain, whose promotional materials use an excessive amount of exclamation points, features a menu of American comfort cuisine crafted from carefully sourced ingredients. And while the burgers—topped with everything from fig marmalade and goat cheese to prosciutto and flambéed capers—are sure to be the main draw for the family-friendly set, we’re most excited about the bar program: 40 beers on tap and more than 20 whiskies, including the exclusive (off-menu, so you’ll likely have to ask for it) Pappy Van Winkle bourbon.  

Reps from Eureka! say Seattle was an obvious choice for their first out-of-state location, since it’s a city aligned with their ambitions to source as much as possible locally. Further nods to the Pacific Northwest include a dining room utilizing reclaimed wood and a heated, outdoor patio. 

Eureka! is opening ahead of a pack of new restaurants slated for the outdoor mall’s shiny new expansion, including dumpling darling Din Tai Fung and Liam’s, a bistro from the mastermind behind Beecher’s and Maximus Minimus. Opening hours start at 11 daily—10 when there's a football game—and run until midnight or later.
