Beecher’s Handmade Cheese, a major attraction at Pike Place Market, is expanding to Sea-Tac. Owner Kurt Dammeier is quite fired up about the space in Concourse C by the Horizon gates (formerly a Regus electronics accessories store).

“We’ve been pestering them for three years and finally the space opened up,” he says. Dammeier describes himself as a fan of both airports and SeaTac in particular, two entities with which he is very familiar after all the air commuting required to open Beecher’s New York City location last year.

Dammeier even partnered up with another local entity to bring caffeine to travel-weary patrons; Caffé Vita will operate a small separate shop within the Beecher’s space, formerly known as Beecher’s Handmade Cheese and Caffé Vita. Dedicated baristas will make the coffee drinks and sell whole beans.

“I wanted a coffee partner to help us do it really right,” says Dammeier. “You don’t want your cheese guys making coffee and you don’t want your coffee guys making cheese.”

Technically nobody is making any cheese in the 2,000-square-foot space, but Beecher’s will serve up plenty of its cheese-laden favorites, including grilled cheese sandwiches, mac and cheese, cheese and fruit plates, and a bit of charcuterie, as well as breakfast paninis and stratas.

Now that Dammeier has nabbed a long-awaited location and navigated the complexities of getting approval from the Port of Seattle, he’s raring to open. The projected timeline is late this summer; the Beecher’s owner says the Port is helping him streamline the process in hopes of catching the end of the busy summer travel season.

Beecher’s will join a host of other Seattle food entities with airport outposts, including Kathy Casey’s Dish D’Lish, Dilettante chocolate cafe, Ivar’s, Anthony’s, and a little-known local niche coffee shop called Starbucks.
