Inspired by a recent Nosh Pit post about margaritas, I started thinking about what I like to drink when things really get blazing outside. Then it hit me: rum, son. I like rum.

Here are some of my favorite rum-based cocktails around Seattle. I didn’t include any mojitos, because I still feel like I’ve yet to find the city’s best. If you have one you love, do tell.

Citrus is an important component for a cooling cocktail, and Sambar’s Extrafin—Estate Rum, East-India Sherry, Quince, Lemon juice—gets the puckerage just right.

At Moshi Moshi, order an Amalfi Coast: rum, aperol, italian vermouth, lemon. At the new bar at Café Flora, however, it’s all about the Empress: Barbados rum, St Germain, and fresh grapefruit juice. When at ZigZag I suggest sipping on a Strega Daiquiri: light rum, Strega, orange, lemon, and Orgeat almond syrup.

Casuelita’s is the place for rum flights and conch fritters, while Barrio is the only spot in town for a caipirinha, a mojito-esque mixer made with cachaça (a Brazilian spirit akin to rum except made with unrefined sugarcane and never molasses) plus lime and sugar. Or you could try a Corn N Oil—dark rum, falernum, angostura bitters, and lime.
