Rain Shadow Meats is hosting a special evening to celebrate Bruce Aidells's new cookbook
The Great Meat Cookbook. Starting at 7:30pm, the evening will focus on today's meat issues - how to talk to your butcher, how cuts can be interchangeable, buying local, grass fed vs grain fed, etc. Rain Shadow Meats butcher Russell Flint will breakdown half a pig while Aidells discusses the various cuts and suggested uses. A book signing will follow the demo, and the evening will finish with a buffet-style dinner featuring dishes from
