Fogon Cuisine of Mexico
The Mi Tierra family of restaurants has put down roots in the Pike/Pine corridor: Fogon is now open at 600 E Pine St, according to Eater Seattle. The groups operates eateries in Woodinville and Monroe, but Noel Cortez, a Mi Tierra partner, said they are stepping up their game to fit in the neighborhood.
Fans of fermented foods will soon have a new go-to. Brining enthusiast Britt Eustis is planning to open Britt's Pickles in Pike Place Market some time this month. Located near butcher BB Ranch, the shop will sell saurkraut, kimchi, and fermented pickles in an assortment of flavors: spicy, hot and sour, ginger.
Manuel Alfau of Blind Pig Bistro is getting in touch with his roots for La Bodega, a Dominican-style sandwich shop in Pioneer Square. The signature item will be stuffed with pernil (marinated, roasted pork shoulder), pickled cabbage, mayo, and cilantro and feature a square bun from Macrina. An opening date is still several months out.
Like tequila is to The Saint, rum will be to Rumba. Tango owner Travis Rosenthal's new project, set to open in September, will feature rum, Caribbean-inspired dishes, and more rum. Rumba's decor will have a Cuban theme, with dark wood, artful ceiling fans, and Panama hats, says Tallulah Anderson, the project's rep, plus bar games.
Capitol Cider Bar
After a year-long search, Capitol Cider Bar has found a home at 818 E Pike on Capitol Hill. Friends Spencer Reiley and Jordan Sinclair are behind the cider-centric spot, which will feature more than 100 varieties. Inspiration comes from Reiley's travels abroad and difficulty in finding good ciders upon returning home. Capitol Cider Bar will also house a full gluten free kitchen serving up pub food and snacks.
Fogo Brazilian Steakhouse
Eater Seattle reports Fogo Brazilian Steakhouse is taking over the tricky prow building at First and Denny. On the docket: rodizio-style meat buffets. Behind the project are two former employees of Ipanema, which closed in 2010.

Tyler Moritz Lands at Zig Zag Cafe
Following his departure from La Bete last month, Tyler Moritz has settled in at Zig Zag Cafe. Bar owner Ben Dougherty says this is no big deal, however--Moritz is a friend who was looking for a place to land. No big menu changes are planned.
Maxime Bilet Leaves the Cooking Lab
After four and a half years in Myhrvold land, Maxime Bilet, head chef and co-author of Modernist Cuisine and Modernist Cuisine at Home, is leaving. Read his farewell letter on the Modernist Cuisine blog.
