She and Shelly Meyers spent six months perfecting the batter they'll lavish with an assortment of savories and sweets. Four of each variety, plus a rotating special of some sort, will make up the daily menu.
"I love the endless possibilities with waffles," says Wehrman, and she's not kidding around. Offerings range from carrot cake with cream cheese frosting (Wehrman sounds particularly proud of this one) to bacon egg benedict to shepherd’s pie on a russet potato waffle. Also on the menu: squaffles, nibs of buttermilk batter dusted in sugar and cinnamon; syrup comes on the side. These things have some major snacktime potential, no? Oh, and everything is available gluten free.
Wehrman and Meyers plan to primarily park on the Eastside but are scouting locations in Seattle, the Fremont Sunday Market being one of them. There's the possibility of late-night hours, and the duo also hopes to become fixtures in South Lake Union. In fact, that's where Roxy's will make its debut, probably on the 28th of March.
