I just spoke with Angela Stowell, chef Ethan Stowell’s wife and business partner. Angela confirmed to me that the couple’s new restaurant, in the Kolstrand Building at 4743 Ballard Avenue NW, will be called Staple and Fancy Mercantile. The name is a reference to products advertised on the raw-brick interior wall of the Kolstrand building, once home to a grocery store.
Angela says Ethan, who has been hopping amongst his restaurants for the past several years, will make the new resto his home spot, and he’ll be cooking there six nights a week. He is designing an a la carte menu, but also envisions a restaurant where diners put themselves in his hands.
The Stowells are sharing the historic Ballard building with Renee Erickson of Boat Street Cafe, who is opening an oyster bar there called the Walrus and the Carpenter. Staple and Fancy takes up about 1,500 square feet, the oyster bar is about 900 square feet.
Union, the couple’s first restaurant, will serve its last dinner on May 29. They hope to open Staple and Fancy in mid-July.
