Shanik, the Vij's sibling restaurant that Seattle has long awaited, will open in early December. It's located deep in the Amazon, at 500 Terry Ave N. Chef-owner Meeru Dhalwala and her business partner Oğuz Istif are readying a dining room and lounge inspired by the beauty of the Himalayas and a small takeout area known as Tiffin (with a curved roof invoking a train car feel) that is sure to do a brisk lunch business. 

Dhalwala and Istif are also taking an approach familiar to many a Seattle restaurateur and offering value-added gift certificates for purchase before Shanik opens its doors. A link on Shanik's soon-to-be-expanded website lets you spend $1,000 for a $1,200 gift certificate. That total can be broken into any denomination you wish (aka you could give 12 people a $100 gift certificate for Christmas). The buyer also gets a pass to one of Dhalwala's Indian food and wine classes, which she will hold occasionally at the restaurant's kitchen counter area. Prepurchase gift certificates are available until November 15.

Dhalwala is still developing her Shanik menu, but she does plan to include some favorite recipes she developed for Vij's and sister restaurant Rangoli, but hasn't cooked for quite some time. Seattle, get ready.
