Mike Easton’s new Il Corvo opens for lunch today (hours are 11-3) in Pioneer Square. After building up a following working on three butane burners tucked behind the counter at Procopio Gelateria, Easton now has a space to call his own.
The former home of BuiltBurger at 217 James received a modest makeover courtesy of Easton and wife Victoria and also serves as a gallery/shrine for Easton’s collection of antique pastamaking devices.
Things are definitely different around here; Il Corvo now takes credit cards, and at a soft open on Friday, I even saw a guy depart with a to-go bag, previously verboten (no call-in orders, though). There’s an actual staff and an actual kitchen. However the new space still feels like the same convivially informal pasta salon. The menu is slightly larger, though still built around a rotating batch of seasonal pastas. The Friday menu included snacks like prosciutto and mozzarella and a platter of caponata.
