Will Seattle, in Fact, Host Top Chef?

Earlier this week Seattle Convention and Visitors Bureau president Tom Norwalk caused a significant uproar amidst food nerds locally and nationally when he let fly to KIRO’s Josh Kerns the fact that Seattle is a finalist to host the next season of Top Chef.

Norwalk confirmed to Seattle Met that our city is indeed one of two remaining contenders for the culinary competition reality show: “We got close last year and didn’t get the nod.” He says the final decision should come within the next few weeks.

At issue for this season, and any season, is whether the host city can pony up enough money to help cover production costs, an estimated $200,000 to $300,000. In exchange, Seattle would be the setting for at least 10 episodes of chef competition, culinary hijinx, restaurant wars, man buns, and the occasional on-camera meltdown. A Seattle-based season would guarantee lots of Space Needle, fish-throwing, and local chef cameos on millions of TV screens around the country.

Top Chef won’t share the identity of the other city vying for hosting rights, says Norwalk, though we’re hearing some (highly unconfirmed) rumors that Portland was also under consideration.

If Seattle doesn’t make the cut again this year, at least we’re still in for some local restaurant television action with the upcoming premiere of Check, Please! Northwest. There’s also the Top Chef season nine finale in Vancouver.

Have you always dreamed of being on a cheffy reality show? Are you hindered by the fact that you aren’t prone to obscenity-laden meltdowns, named after one of the 50 states, or…not actually a professional cook? Perhaps celebrity chef Gordon Ramsay can help. Ramsay’s reality show MasterChef is holding an open casting call for talented amateur cooks on Saturday, December 3 here in Seattle.

Well, technically it’s in Tukwila. Casting call action happens from 10 to 6 at Le Cordon Bleu, 360 Corporate Dr. N. Here’s the full rundown on eligibility and other equirements. The show itself has some dubious moments, but the grand prize doled out by Ramsay and fellow judges chef Graham Elliot of Chicago and New York restaurateur Joe Bastianich is a not-too-shabby $250,000.

What’s It Like to Appear on TV in a Food Competition?

We asked Top Pot’s Mark Klebeck, recent contender on Food Network Challenge: Donut Champions.

These days, you can hardly turn on the tube without coming across some high-octane competition tasking toques to cook up thisorthat crazy concoction. The challenges are often rushed, the ingredients off the wall, and the drama amped up.

So what’s it like to appear on one of these shows?

I asked Mark Klebeck, co-founder of Top Pot. He recently competed on an episode of Food Network Challenge alongside Sara Beth Russert of Mighty-O Donuts and rolling pins from Denver and Daleville, Virginia. Here’s what he said about the experience.

1. The days are really, really long.
With 15 boxes of equipment and foodstuffs in tow, Klebeck flew into Denver on a Monday and immediately went shopping for fresh ingredients. On Tuesday he began filming what’s called “hero” shots: posed b-roll footage. Those were followed by two hours of interviews, a meeting with the judges, and time to set up his cooking space. On Wednesday the bakers arrived on set at 4:30am and by 6 the camera was rolling—and kept rolling until 8:30 that night. Thursday brought post interviews. All told, producers gathered 130 hours of footage between the four contestants and edited it down to 44 minutes of airtime.

2. You can prep all you want, but it won’t necessarily pay off.
When Klebeck committed to the Food Network, he wasn’t sure what show he’d appear on, he just knew to block off certain dates. To play it safe, Klebeck spent eight days in the kitchen with TP’s lead baker. He’d get up at 1:30am, meet him at 2, and spend six hours rolling cake (and then head to work for a full day in the office). What you can’t prep for: how you’ll feel. Klebeck likens the competition to running a marathon; three miles in you might settle into a groove, but who knows what mile 18 or 19 holds. What else you can’t prep for: curve balls like having to cook with a mystery ingredient, or the the elevation in Denver, which threatened to turn leavening agents in the dough into “softballs.”

3. It’s not just the camera in your face that gets distracting.
Each contestant is assigned a field producer and a camera producer who watch his or her every move. It’s the job of the former to constantly quiz the contender. It’s the job of the contestant to answer each question in complete sentences without looking at the camera, all while continuing to compete. “You’re juggling a lot and trying to give them what they want as far as content,” says Klebeck. And let’s not forget the ever ticking clock. “Emotionally and physically it’s one of the hardest things I’ve ever done.” So taxing that Klebeck lost about seven pounds during filming while prepping and filming (about two weeks total).

4. The judging session is as uncomfortable as you’d expect it to be.
Nice as they were offstage, the judges don’t hesitate to “rip you a new one.” Smile, suck it up, and remember it will be over in a matter of minutes, Klebeck advises. “You’re there and they totally mean business. You just can’t take things too personally."

5. The first you do after filming is…
Sit down? Cry? Nope: “My appetite came back—I just hadn’t been able to eat. All of sudden my stomach wasn’t hurting anymore. I think I went and scarfed down a cheeseburger. And a beer."

6. Keeping mum isn’t easy.
Klebeck filmed the segment in mid-November and it aired in April. Per a non-disclosure contract, that meant nearly five months of not telling his wife, coworkers, and toughest of all, Northwest Harvest, what went down. Klebeck had promised the local hunger prevention agency the $10,000 prize money if he were to win.

7. But when all is said and done…
Would Klebeck compete again? “Oh yeah,” he answers without hesitation. “Definitely.” It should be noted Klebeck often used the word “fun” throughout our interview—even if he did wrap up the conversation with this declaration: “If you can get through this experience, you feel like you can do anything. Because it literally beats you down.”

In case you didn’t catch the Seattle-centric episode of Throwdown! with Bobby Flay when it aired several weeks ago, the Food Network is showing it again Thursday evening at 7pm ET/PT.

In it, Matt’s in the Market toques Dan Bugge and Chester Gerl take on the bronzed Bobby to see who can cook up the best salmon chowder. Sounds fun.

Also fun is the fact that a familiar name here at Nosh Pit, Jessica Voelker, is one of the judges (go JV!) Tune in tonight to see which bowl she and Tom Douglas decide who takes home the crown.

Blais!

Richard Blais may not have been the most humble of Top Chef contestants, but he was certainly among the most awesome. Do I need to remind you of smoked salmon with tapioca pearls and wasabi white chocolate sauce? Banana guacamole? Warehouse Kitchen? The headband? Season four ruled, and Blais almost ruled season four, except then Stephanie did.

And on Friday, October 8, Blais is coming to Seattle to cook alongside chef Brian Scheehser of Trellis, the restaurant inside the Heathman Hotel in Kirkland, and host chef James Hassell, the head guy at the Tower Club.

The dinner, a multicourse affair, benefits the James Beard Foundation and costs $150 per person. Call 206-622-2010 for tickets.

Bravo Announces New Top Chef Lineup

Did any Seattleites make the cut?

The eighth season of Top Chef will premiere December 1.

The rumor mills have been working overtime as to who’d be toque-ing up on the eighth edition of Top Chef (ever heard of it?). Now, Bravo confirms what blogs were speculating for weeks: the lineup will include 18 “all-stars” from seasons past.

Sadly, Seattle—no stranger to the TV competition —won’t be repped in this go-round.

The aptly-titled Top Chef: All-Stars is set to air December 1. Grub Street has a video preview of the show and the contestants.

Seven More Familiar Four-Wheelers Join Food Network Competition

Looks like Marination Mobile isn’t the only familiar four-wheeler competing for the crown of America’s best food truck.

Another seven local sidewalk gourmands—El Camion, Hallava Falafel, Maximus Minimus, the Molly Moon ice cream wagon, Buns, Here and There, and Skillet (read more about them on our food truck finder) —are trying to edge out mobile kitchens from across the country to be named top dog by Food Network, a distinction that comes with $10,000 and the chance to compete on the channel’s Great Food Truck Race.

Last time we checked in, Marination was holding steady in fifth place. If you’d like to see another Seattleite in the top 10, get clicking.

Word on the web is Marination Mobile is vying to compete on the channel’s second season of The Great Food Truck Race. The food truck (and note: not a few are nominated) with the most votes also will be crowned America’s favorite and receive $10,000; MM has said it would donate half to the Puget Sound chapter of Susan G. Komen.

Check it out. That’s Jason Stratton of Spinasse front and center on this month’s issue of Food and Wine. Yay, Jason!

Stratton found out in April he landed a spot on the publication’s Best New Chefs list for 2010. Needless to say, it’s a huge honor.

Per the mag’s website: F&W editors spend months finding them. To locate cooks who are fantastically skilled, creative and driven—and who have run a kitchen for no longer than five years—we gather recommendations from food professionals nationwide, then eat anonymously at countless restaurants.

Is this Stratton’s week or what? The cover comes days before he stars on an upcoming episode of Chef Vs. City.

Airdate Announced for Seattle Episode of the Food Network’s “Chef Vs. City”

Back in April, we at Nosh Pit got all excited when we learned Spinasse chef Jason Stratton and sous Carrie Mashaney would be starring on an episode of “Chef Vs. City,” a Food Network show in which two hosts travel to cities around America, challenging local food folk in a series of competitions.

On one episode, I saw contenders nearly vomit as they gulleted the spiciest goat dish in all New York city, then embark on a palate pop quiz at a local picklery. It’s all in a day’s work when you’re in the employ of the Food Network, but how will our local chefs fare?

We’ll find out when the Seattle episode airs June 18 at 10pm. Look for such local landmarks as Pike Place Market, Top Pot Donuts, and Anchovies and Olives.
