Food News: La Bête to Take Over Chez Gaudy Space

Aleks Dimitrijevich and Tyler Moritz hope to open their “casual, neighborhood” restaurant by mid-June.

La Bête—which will open on Bellevue Ave in mid-June in the space formerly occupied by Chez Gaudy—is the new Capitol Hill restaurant venture from Aleks Dimitrijevich and Tyler Moritz, who once worked together at Union.

Moritz, who has also worked as a sous at Lark, says the restaurant will have a casual, neighborhood feel, but there will also be “nicer things, the food we like to do.” The menu will have a snacks section, and a separate small-plates section to include pork belly, oysters, and crudos. It will also feature a set of dishes served family-style—among them whole Dungeness crab, roast chicken, and leg of lamb.

Between now and June, Dimitrijevich and Moritz will be hard at work gutting the place. The kitchen will be open to the dining room, with counter seating. It needs a total overhaul, according to Moritz, who says one of the biggest issues is ventilation—there is currently no hood. They are also remodeling the bar area to create a more airy feel. Moritz says the duo hasn’t yet decided who will run the bar, but they will definitely be a “solid cocktail” program. In fact, the snacks section of the menu will be specifically designed for craft-cocktail pairing. Reservations will likely be online only. Stay tuned for updates….

This is exciting! I hope they don’t do too much to the interior. Though I wasn’t wild about Gaudy’s food, it was a great atmosphere—so cozy.

How exciting! Chez Gaudy had a nice vibe but the food was absolutely AWFUL. I live a block a way so I hope to frequent La Bete!

Ditto Ditto! Interior was super fun/cute, but that food…so salty! Gourmet Lean Cuisine is what I’d compare it to.

We live across the way and are THRILLED to have a cute place going in. Looking forward to being a regular for the Dungeness Crab.
