Where the chef has gone; what he left behind

Dan Thiessen of Archery Bistro

A few months back local chef and radio personality Dan Thiessen left his Bellevue restaurants O8 Seafood Grill and Stir Martini and Raw Bar in search of projects he could build a solo career on.

Introducing the first of these—and this not in Bellevue. Archery Bistro opened in November in Normandy Park; a lunch, dinner, and happy hour joint with a distinctly neighborhood flavor and 25 wines by the glass.

And word out today reveals that Thiessen’s erstwhile flagship, the creamy O/8, is now defunct; its husk to be filled by the neighboring Twisted Cork Wine Bar.

Owner Matt Bomberger on why: “0/8 Seafood Grill was competing with an incredible number of Eastside fine-dining restaurants. However our wine bar—which is decidedly more casual—has always drawn a loyal and lively crowd.”

Twisted Cork will now offer a bistro-style menu based on local ingredients.

Please know that the restaurant will remain open during this transition. Our new menu and service style is well into development, allowing a smooth transition come February. We look forward to our guests enjoying our new format, whether breakfast, lunch, dinner, or late night!

Seems Dan is not at Archery Bistro anymore either according to seattledining.com
