It's Unsung Heroes week here on Sauced, in which readers chime in with their favorite underappreciated watering holes.
Open Since: 2009
Why it’s awesome: Reader Treena Colby said she was hesitant to sing the praises of this West Seattle bar, in hopes of keeping it more to herself, but in the end her generosity of spirit won out, and she informed us that Feedback is sorely underappreciated. Her reasons: a cocktail list full of fresh ingredients and housemade tinctures, infusions, and bitters created using fresh, locally purchased herbs and produce by partner and bar manager Matt Johnson. “And the drinks won’t cost you north of $10, like most downtown, and too-hip, bars.”
Every Thursday night is cocktail club night at Feedback (yes, get those obligatory Fight Club quips out of your system). At 6pm, Johnson introduces a new drink on the menu that night only, and chef Wade Peer puts together a plate using similar ingredients. These nights are often sellout affairs, says co-owner Jeff Gilbert, and well-received drinks might land on the next iteration of the bar's cocktail list. Gilbert has one hell of a music background, from working in record stores to DJing to hosting a heavy-metal radio show, so it should come as no surprise that Thursdays are also deep cuts DJ night, where DJs Kingblind and G$ (an accountant by day) spin tracks of every genre, "the more obscure the better." Tuesday nights are for pop culture and music trivia, with proceeds going to local firefighters group Seattle's Bravest Charity. On a less auditory note, Gilbert also spearheaded the West Seattle-only beer project.
