August 16 will be a sad day in Capitol Hill, as owner Aleks Dimitrijevic will shutter his restaurant for good. But don’t mourn for too long; the chef/artist with a restless mind will be launching a new venture in the same space come fall centered on a smoker he recently built, and a promise that La Bête's burger, chicken liver mousse, and pork rinds will likely reappear.
Zig Zag Cafe
Speaking of La Bête, former co-owner and co-chef Tyler Moritz has embarked upon a new adventure: revamping the static food menu at Zig Zag. Though Seattle has enjoyed the imbibables at the cocktail landmark for years (even after the Murray Stenson era), the edibles haven’t been the draw they could be. Moritz plans to change that by emphasizing seafood and seasonality.
The locally sourced organic sandwich shop has become a full-fledged chain, launching its sixth space at 104 Lake Street in Kirkland early this week. Photos from the soft open hit Facebook on Monday and garnered 70 likes even without the Nosh Pit bump.
The West Seattle New American restaurant posted on Facebook last week that it would close down the space at 3247 California Ave SW for a quick remodel before a grand reopening tonight. Maybe they upgraded to a Smartboard. Got to keep up with the times.
The remodel at Eric Banh’s 15th Avenue Vietnamese restaurant has finally finished, with 800 square feet of new 21+ space alongside the original dining room. The bar isn’t just newly opened; it also boasts an extensive liquor collection curated over the course of six months by exuberant beverage director Jon Christensen in collaboration with a Chinese medicine guy (that might not be what he calls himself on business cards).
As the gluten-free bakery’s indoor space at 518 15th Ave E is still under construction, partners Amanda Bedell and Phebe Rossi have decided to make the street outside a destination for lovers of bread, pastries, and ice cream sandwiches (appealing to both the gluten intolerant and their more tolerant brethren). Bedell and Rossi will be serving up treats and breads at a new pop up every Friday from 7–10am and 3:30–6pm until the cafe seating and counter is ready in the fall. There's a class schedule, too.
Wine bars typically have their own digs, but sommelier Luke Wohlers (yep, the same Luke Wohlers who paired wines with the meals at Herbfarm and Eleven Madison Park) has partnered with his wife Trinie Thai-Parker and friend Emily Smith to bring 25 wines and six diverse dishes to Little Uncle in Pioneer Square every weekend through September, notes Eater Seattle. Walden will take over Little Uncle’s 88 Yesler Way space Friday and Saturday nights from 8pm to midnight.
Eater Seattle discovered what will be going in next to Greece-focused Omega Ouzeri in REO Flats on Capitol Hill’s Auto Row: global small plate purveyor Nue. Owner Chris Cvetkovich’s first jaunt into the restaurant business will sample lesser-known street foods from South America, Asia, the Mediterranean, and whatever other cuisine strikes Cvetkovich’s fancy. The plans also include a street window for taking orders and liquid nitrogen ice cream. Cool.
Bottle and Bull
Kirkland’s Lake Street has made waves this week with the opening of Homegrown and the announcement (per Eater Seattle) of plans to add a Hemingway-themed gastropub next door. Bottle and Bull’s food menu is the brainchild of former Miller’s Guild sous chef Stephen Paulson, and, paired with a drink menu from counterpart Silas Manlove of Bastille and Soneburner, should make for an excellent addition to Kirkland’s waterfront offerings.
Emmer and Rye’s former space at 1825 Queen Anne Ave N will have an operational occupant August 6, reports the Queen Anne View. Nana’s Mexican restaurant plans to offer “traditional Mexican food with accents of American fare,” according to a craigslist posting from way back in May when the owners were looking for cooks.

Paige Zahnle of Beardslee Public House
Chef John Howie’s Bothell restaurant and brewery, set to open in November, has a newly minted Cicerone in its midst. Before completing the second level of the Cicerone Certification Program, Zahnle was a sommelier at Seastar. She’ll be Beardslee’s only certified Cicerone and will assist head brewer Drew Cluley in perfecting craft beers for Howie's new venture.
