Wherein we ask a local wine notable to make our weekday drinking decisions for us.
Re:public’s wine buyer Ashley Sinko started in the restaurant industry as a sixteen-year-old and began studying wine in 2008. She’s been at Re:public since its opening in 2010. Her favorite thing to sip year-round is a rosé from Provence (you’ll always find rosé on her by-the-glass list at Re:public) and she prides herself on finding “great, cheap wine… even if that means working with obscure regions.”
So, what do you think Ashley, what should I drink?
Not all wines are meant to be perfect or wow a crowd. Wine does not need to be expensive nor does it need to come with the opinion of a critic in the form of a numeric score. Sometimes a bottle of wine needs to just be. And right now, at this very moment, this gem from the south of France is exactly that. The 2010 Chateau Beaubois ‘Cuvée Expression’ is a blend of Syrah and Grenache.... The nose is rustic and earthy with that southern French funk I have grown to adore. Dark cherry and raspberry shine on the palate with hints of violet and tobacco. Pair this wine with charcuterie, braised meats or roasted root vegetables. Or, simply drink it on its own. You’ll be happy regardless. And best of all, it’s pretty darn cheap. Perfect for a dreary October night.
