It hasn’t even been a full year since artisan juice bar Jujubeet opened its doors to Bellevue last July, but when its owners saw an opportunity to bring their nutrient-rich juices to Seattle this summer, they seized it.

Co-founders Bianca Svyterski and Mala Raman are pumped about their new location: a great space at 4915 25th Ave NE, near University Village with a courtyard for outdoor juice sipping. The grand opening will go down on Thursday, July 10 from 9am until 3pm, with all-day food and drink samples, twenty percent off everything, and some goodie basket giveaways.

Unlike the previous generation of juice bars and smoothie shops, Jujubeet’s creations are vegetable-focused. Fruit steps in to lend sweetness and balance, while ingredients such as turmeric and cacao nibs add complexity to the recipes. Svyterski says enough Seattle customers were making the trek to the Bellevue shop that a 206 location made sense.

The new Jujubeet has the same lineup of juices, smoothies, shots, breakfasts, and lunches—including a to-go fridge full of premade bottles. Yep, the shop does cleanses.

Just like at the Bellevue location, customers can come in and order a 16-ounce cup of freshly made concoctions like Happy Greens (kale, fennel, spinach, celery, apple, cucumber, lemon) or an Athlete's Fuel smoothie (almond milk, protein powder, maca powder, frozen banana, and a honey-based energy drink). To save money—and a trip to the store—customers can bring in re-usable glass gallons, and have them filled with cold-pressed juice. Like a juice growler. It's good for up to three days.

Svyterski describes the juicing community as ‘pretty health conscious,’ while admitting that there’s only so much salad you can eat. That said, the good-for-you food menu contains breakfast and lunch bowls, wraps, and, yes, salads.

The juice bar's location will also be of interest to anyone in need of a healthy energy boost while, say, on a long run along the nearby Burke Gilman trail.
