This Week in Restaurant News: Expansions, Cocktails, and Fried Chicken
Plus Murray Stenson has a surprising new gig downtown.
The Thai vegan chainlet is adding a Madison Valley location on May 1, according to an Instagram photo that ricocheted around Twitter this week. Araya’s new Place is nestled between Fury and Lavender Heart Botanicals on East Madison.
Agave Cocina and Tequilas
Federico Ramos’s Guadalajara-inspired small plates, traditional dishes, and over 150 tequilas are expanding west into the Expo Building on First and Republican in Queen Anne. The new sibling to Agave’s Issaquah and Redmond locations is set to open April 28, just in time for Cinco de Mayo festivities.
The Collins Building at 13th and Pine just scored a spot for ippin; tempura, ramen, and more...but not sushi. In classic Japanese izakaya style, sushi is left off the menu in favor of varied small plates. Added bonus: sake!
The Mix Martini Lounge
Former tugboat captain Wayne Allen recently finished converting the former Karma Lounge in Belltown into this fresh cocktail bar manned by former Tin Lizzie tender Justin DeLong, reports Eater Seattle. Happy hour highlights include a shrimp cocktail with Crater Lake pepper vodka shaken into the sauce.
Tango and Rumba have a new sibling serving coffee "corrected" (read: "with booze") on Broadway in Capitol Hill. Alongside the four augmented espresso shots, Corretto boasts an Italocentric cocktail menu and former La Spiga Chef Laura Ligona's raviolis and pastas.
After just one year on Bellevue Avenue in Capitol Hill, Capitol Hill Seattle Blog informs us the Spanish cafe will shutter this weekend. No word yet on what may permanently occupy the space next, but Fuel Coffee will be popping up from 7 am to 2 pm for the time being.

The Admiral Benbow
The delightful West Seattle throwback currently known as The Heartland Cafe and Benbow Room has new local owners, who plan to revive the space’s Treasure Island-inspired moniker. Along with the name resurrection, Ian and Allison Hill are working hard to restore the live music venue in the back, update the cocktail menu, and augment the diner food centered menu before a grand reopening some time around June 1.
The Elysian Downtown
The Seattle Times has more details on the bar that the Elysian Brewing Co. is opening downtown on Second between Pike and Pine. Though Elysian is a latecomer to the craft cocktail scene, the brewery brought in Zig Zag Cafe veterans Kacy Fitch and a bartender by the name of Murray Stenson to jumpstart the new venture.
Fat’s Wings and Waffles
This chicken and waffles joint headed to Rainier Beach is the brainchild of Happy Grillmore food truck owner Darren McGill and Marcus Lalario of Li’l Woody’s., notes Eater Seattle. Fat's aims to offer organic, locally sourced fried chicken, waffles, and five varieties of chicken wings; it's slated to open in early May.
Viscon Cellars Wine Tasting Room
West Seattle Blog revealed that neighborhood winery Viscon Cellars is in the process of converting the former Stitch and Sew Studio space on California into a tasting room for its VC label wines. Proprieter Ben Viscon hopes the place can become a gathering spot for the neighborhood's veteran and potential oenophiles alike. We think it's safe to assume outsiders will be welcome too.
Capitol Hill Seattle Blog reports a fresh take on French-influenced Vietnamese cuisine is opening at 300 E Pike sometime next fall. The 80-seat restaurant and bar will be chef Eric Johnson's first venture in Seattle and his first since returning stateside following projects in Hong Kong and Shanghai.
The Beardslee Alehouse and Wildwood Spirits Co.
Chef John Howie and distiller Erik Liedholm sent word they are launching these joint ventures in Bothell, at the Village at Beardslee Crossing, come September. The duo plans to feature locally sourced ingredients at the paired distillery and restaurant. The Alehouse will feature a 10-barrel brewery and a menu centered on burgers, brats, and flatbreads, while the centerpiece of Wildwood Spirits Co.'s tasting room—styled to mimic an old English apothecary—will be a window into the distillery itself.
