Fuji Bakery Reopens on March 23
The artful bakery is back in Bellevue and the International District. But the new location is still in progress.
I’m going to set all pretense at dignity aside—OMG, you guys! On Saturday Fuji Bakery will reopen its Bellevue and International District locations. The French-meets-Japanese bakeries have been closed since July (July, people) as the company readied a new flagship location in Interbay. So I have spent eight months deprived of curry buns, bacon epis, and other jewel-like treats. The Bellevue location is a bit larger, but the ID address is on my go-to list for impressing the hell out of visitors.
Owner Akihiro Nakamura says the new location on Elliott Avenue is still a work in progress, but it might be open as early as next week if the permiting gods cooperate. He also cautions that the menus will be very limited when the two other locations return. They will be serving up croissaints and white bread, a few pastries, and some newcomers, like a cranberry bread. The stores will gradually amp up to full menu status throughout the spring.
